I cooked my first real meal in our new stove on Wednesday. I wanted to make a hotdish so I would have planty of leftovers for the remainder of the week.
I had tater tots and all the fixing for the traditional tater tot hotdish that I grew up on. But I wanted something different so…
I like to call it South of the Border Tater Tot Hotdish.

brown up some ground turkey (lower calories and fat than beef)

cook rice and beans according to directions on back of box

while rice and beans are cooking add salsa to meat (Mom I was running low on your salsa and didn’t want to waste the good stuff on something that could be a culanary disaster)d

layer beans then rice then tator tots. sprinkly tator tots with taco seasoning

bake in oven according to tater tot package directions

add cheese the last few minutes
Tim and I topped ours with salsa and low fat plain yogurt (instead of sour cream. again, trying to save a few calories) and ate it as a hotdish/chip dip with our favorite tortilla chips.
A fast yummy meal with a bit of a kick. Best of all you won’t have to cook again for a few days. Tim and I are having it for dinner again tonight. Yay for the same supper 3 nights in a row. Tim is a lucky guy!!
